Christmas Chocolate Fudge




Ohhhh - you have to try this recipe for Chocolate Pistachio Fudge , another Nigella Lawson goodie and once again as with the Christmas Spiced Peaches from yesterday, super simple and easy.

I made this with my daughter Bell for teacher gifts.  As it is quite rich you need to cut it into small pieces so you will end up with about 60 pieces.  I ate loads of it last night (one for the gift bag/jar one for me) and it is delicious.

I used mixed nuts rather than straight pistachios but thought cranberrys and pistachios would be a fun Christmas (great colours) touch for the next batch.  It also freezes well.

What you need:
  • 350 grams dark chocolate - chopped (minimum 70% cocoa solids)
  • 397 grams condensed milk
  • 30 grams butter
  • 1 pinch of salt
  • 150 grams Pistachio nuts - we used mixed nuts


  • Method:

    Put the chopped chocolate, condensed milk, butter and salt in a heavy-based pan on a low heat, and stir to melt.

    Put the nuts into a freezer bag and bash them with a rolling pin, until broken up into both big and little pieces.

    Add the nuts to the melted chocolate and condensed milk and stir well to mix.

    Pour and spatch this mixture into a lined tray 23cm square, smoothing the top.

    Let the fudge cool, and refrigerate until set. You can then cut it into small pieces approx. 3 x 2.25cm. Cutting 8 x 10 lines in the tin to give 64 pieces best achieves this.

    Once cut, it can be kept in the freezer - no need to thaw just eat straight away

    4. Oh man, I seriously love Whittakers chocolate...we used to live up the road from the factory and it was torture smelling all that delicious chocolate cooking away :)

    7. Yum! I use a similar recipe and recently made peppermint fudge (just add some peppermint essence). I didn't know you could freeze it (but then, I've never had a problem with leftover fudge).
