Gone fishing!

Sunday morning we took the boys fishing - a 15 minute drive to the coast, down a gravel road and a few twists and turns to the far end of the beach where the sand is piled with driftwood. It's a popular place to fish from the waters edge.

We didn't catch a single fish! But it was a great way to send a couple of hours in the sunshine. Building sandcastles, exploring, digging about in the sand, collecting shells and building forts out of driftwood.

We will try our luck at the wharf this weekend, where hopefully the fish will be biting!

So glad it's Friday, and the weekend is here. Have a great one!

Apple and sultana shortcake

I shared these delicious photos a week or so ago but thought I should also let you know how to make the shortcake.

This was originally an Apple Shortcake recipe but I added the sultanas too - it's a good basic recipe to use when wanting to use different/seasonal fruit.

Great for a lunchbox treat, or a morning or afternoon tea treat, so enjoy.

Apple and Sultana Shortcake

You will need:

2 1/2 cups Self-Raising Flour
1 1/2 cups Sugar
190g Butter
2 Eggs, lightly beaten
2 cups Apples, peeled, sliced and cooked (I gently cooked in a pot of shallow water)
1 cup Sultanas
Milk to brush

Method:

Sift flour into a bowl, add sugar and stir to combine.  Rub in butter and then add eggs to form soft dough.  Press half the dough into a greased slice tin, cover with cooked apple and sprinkle the sultanas over the apple.  Place the remainder of the dough over the apples and sultanas and press lightly into place.  Brush lightly with milk.  (You could also roll out your top layer of the dough and place on top of the fruit - then brush with milk).

Bake 20-30 minutes at 350F (180C).

Enjoy!

Down the road

On the long weekend we wandered down the road to our neighbours house.

They were out for the day so we went over to let one of their dogs out and take him for a walk with our dog Maybell.

The boys love it on their farm, especially Tom who walks around the place like he owns it.  He lead the way and took us to his favourite spots, the pond, rope swing and wool shed.  Sheep chutes are the perfect slide for small children!

The views are breathtaking from their spot - you can see the sea - the surrounding hills, farms and vineyards.  Just so very beautiful and something I never get tired of or ever take for granted.

Next time we visit I'm going to see if my behind will fit down that sheep chute!

*That sweet little cottage is on our wander......I love it.

The garden share collective - Summer vegetables

Spent this afternoon in the garden, putting in my summer vegetables.  I had weeded and turned the soil over last week and with overnight rain it was an easy task putting everything in.

I went to the plant barn in town.  Such a great set up.  You grab yourself a tray which has sheets of newspaper on it.  And you take and wrap the plantings you want - all for 25cents each.  Tomatoes and capsicum plants are $2.50.  I will be heading back again next week to pick up some chilli plants.

Growing in the garden I have:

Capsicum - red/orange/yellow
Broccoli
Spinach
Zucchini
Cucumber
Lettuce
Spring onions

Still growing from previous plantings:

Carrots
Kale
Strawberries - think we will have a bumper crop this year.

Jobs to do:

Mulch down around the new plantings
Covering for the strawberries (before the birds spot them)

Happy gardening!
