Apple and sultana shortcake






I shared these delicious photos a week or so ago but thought I should also let you know how to make the shortcake.

This was originally an Apple Shortcake recipe but I added the sultanas too - it's a good basic recipe to use when wanting to use different/seasonal fruit.

Great for a lunchbox treat, or a morning or afternoon tea treat, so enjoy.


Apple and Sultana Shortcake

You will need:

2 1/2 cups Self-Raising Flour
1 1/2 cups Sugar
190g Butter
2 Eggs, lightly beaten
2 cups Apples, peeled, sliced and cooked (I gently cooked in a pot of shallow water)
1 cup Sultanas
Milk to brush

Method:

Sift flour into a bowl, add sugar and stir to combine.  Rub in butter and then add eggs to form soft dough.  Press half the dough into a greased slice tin, cover with cooked apple and sprinkle the sultanas over the apple.  Place the remainder of the dough over the apples and sultanas and press lightly into place.  Brush lightly with milk.  (You could also roll out your top layer of the dough and place on top of the fruit - then brush with milk).

Bake 20-30 minutes at 350F (180C).

  5. Made this today for the first time and ohhh my what a treat! Not too sweet, soft with crunch.. The shortcake base is amazing and look forward to baking this and many variations over and over. Thank you :D
