Roasted feta with walnuts, rosemary and maple syrup









This easy and insanely delicious recipe is another goody by Eleanor from Petite Kitchen.  It will be on regular rotation around here.  I made this Sunday afternoon as a decadent pre dinner treat.  It is very difficult to not eat the entire lot in one sitting!

You will need:

A block of feta
1/2 cup walnuts
2 tbl spoons olive oil
Handful of rosemary
Maple syrup or honey if you prefer

Method:

Heat oven to 180c.
Dry roast your walnuts and set aside.
Place your block of feta in a roasting dish, drizzle with the olive oil and scatter over your rosemary.
Bake for 25 minutes or until golden.
On serving sprinkle over the walnuts and splash a generous amount of maple syrup over the feta.
Serve with crusty bread or crackers - bread is a good option as you will want to soak up any leftover maple syrup!

  2. That looks beautiful. I am not a big feta eater but would definitely try this. I wonder if a tiny dash of honey would be good, too? Cx

    1. The recipe suggested honey or maple syrup. I went with maple as I only like honey if it is mixed in really well with other ingredients. Rosemary and maple together are so very very good xo

  4. Hmm, this looks really interesting. I've never heard of heating feta before. I just transplanted my rosemary plants and brought them inside to try and over winter them - might have to cut off a couple of sprigs!

    1. Now that sounds like a plan! These aren't fresh walnuts but there are plenty of trees around, not sure if they are in season at the moment though xo

  8. Ugh that makes me sooo hungry.. my work lunch sucks in comparison. But will deffo pick up some feta at the cheese market to give this a go.. I actually grow rosemary so it's great to have something to do with it that isn't lamb! Hazel x
